so we're going to take off the peels, but we're going to save the peels because we're going to use them to make a very quick homemade seafood broth later. and of course, sometimes this is done for you if you buy what is called "easy peel shrimp." but sometimes if it's not cut open, you want to go in there, cut open the top, and make sure there's no icky vein in there. and a trick is to use a paring knife and you can just wipe off the vein on a piece of paper towel and then throw it away. so obviously, shrimp cook through really quickly, and if you added them at the beginning they would be overcooked, so we're going to add them at the end. but if you just sprinkle them into the dish, they taste really bland, so we're going to marinate them. this is a tablespoon of olive oil, a teaspoon of minced fresh garlic, a little bit of salt and pepper. and you're going to stir this around so that it's all nice and coated. and we're going to keep these in the refrigerator until we add them to the pot at the last moment. all right, so now onto the flavorful broth. so to the shrimp shells we're going
