sap. then it kind of moves into this boiling machine right here. take us through the evaporator and then what happens here with this machine. >> once we process the sap through our own machine, it takes most of the water out, 50% of the water out of it of. we can make syrup at a quicker rate and making a better product using less wood and labor. once it goes through the machine, it goes into the tank and feeds into the evaporator. we always have fluid coming into the evaporator. once it fires up we have three gallons every 15 minutes. the sap is coming in the back pan and the pan is called the flue. between the flues we have flaming shooting. we have a larger surface area quickly and also a two-part pan. it comes in one corner and as it as fresh sap hits it, it moves sugar from the pan around to the other side. from there it coming up to the syrup pan. it's a completely flat pan like a make. it pushes it back and forth and back and forth until it gets to the last pan. it's boiled longer than anywhere else and has more sugar content and the temperature is s
