well, we came up with a bubbling hot dip inspired by the popularity of fish tacos. we even "party tested it" and it's been getting rave reviews. we start by baking some white fleshed fish fillets and once they're cool, we flake them and set it aside. after testing this with a bunch of different types of fish, we think the u.s. farm-raised catfish really stands out since it has a mild flavor and it's hearty enough to hold its own. next we mix some cream cheese along with a bit of sour cream and a package of taco seasoning, which gives this its bold flavor. now we gently fold in the fish and spoon it into a pie plate and bake it off until it's creamy. then, right before serving it, we'll top it with some fresh salsa, shredded cheddar, scallions and some black olives. put this out or bring it to any holiday party tortilla chips for dipping, and watch it disappear. with the mild taste of u.s. farm-raised catfish and all the south- of-the-border touches, you can't miss. i do hope you'll go online and get the recipe for our, "famous fish taco dip," so you can have it at y
