secretary vilsack just as you have returned to the usda usda. i'm excited to have returned to the ag committee again this year and i'm pleased to be working with you once more. i want to begin my questions by sticking with the livestock theme of this hearing and ask about contract production, especially in light of a large number of dairies in the northeast region recently losing their organic milk contracts. i'd be curious to get your thoughts mr secretary about production contracts, as i know these are also common in other parts of the livestock sector. i'm troubled that in some cases production contracts can inhibit producers with unstable pricing structures and short contract length. sometimes farmers don't have much leverage to stand up for fairer terms. i'm wondering if you are also concerned about that and whether this can disadvantage smaller farmers and producers as well as certain geographic areas and you think there will be lessons we can learn from this situation in the northeast that could help small producers remain viable. sec. vi

while the usda's nutrition programs that help more americans during times of need. any discussion about state of nutrition in america today must include a discussion about the quality of the foods that can be purchased through these programs. we all know that an excess of low quality foods can have negative health outcomes for americans, empty calories, not one that are making you stronger and healthier. since' 69 obesity rates in the u.s. have increased from 12% over 42%. clearly not heading in the right direction. likewise, preventable chronic illnesses, like type two diabetes and growth -- coronary heart disease continued to plague more and more americans. federal nutrition policies are still geared strictly to address caloric deficiencies, failing to prioritize the nutritional content of our food. as a result, reports consistently show that programs are even making poor choices when it comes to american's nutrition. worse outcomes. let me repeat that our federal nutrition programs may be making poor nutritional outcomes worse for low income american families. th

so usda technically does not recommend stopping in turkey.cause the temperature variation between the inside the cavity of the burden. the outside can be different. and so you just increasing your chances of foodborne illness. but you're going to stuff turkey, their number things you can keep in mind to stay safe. and the first one is a lot of folks like to prepare that stepping in advance and you can do that. but you want to keep the wet injury and the dry ingredients separate from each other. then right before you're about to put that bird in the oven. you want to get the stepping in their combined. those ingredients and put the stepping in there. then when you take the bird out, you want to make sure that the bird itself. >> it has reached a safe internal temperature of one 65. you also want to make sure that the stuffing has reached that safe internal temperature of one one 65 and you do that by using a food okay. very good. i thank you so much. hopefully we'll have a lot of successful. thanks. give me years. >> with your advice. wendy, t
