some of the vegan cheeses don't melt really well, but some of the cheeses just say that they're dairy-freeomething called casein which is a butter fat, in which case, you might as well just be eating dairy. so, try to find the ones that are vegan. there's some really nice ones out there that don't taste like rubber and actually have a good flavor and the ability to melt because of the way they're processed. so, again, it's fun food, this is not something you wanna keep in their diet every day, but you know, it gets you over that, "i want mac and cheese," thing. okay, that should give us enough. so we're gonna add some almond milk-- you can use soy or rice milk. i like to use almond milk for this because it brings a little bit of sweetness to it, which you don't always get in the others without adding sugar. a tiny bit of pepper... if your kids don't like it, don't use it. and a little bit of salt. and we're gonna let this start to melt. you have to keep your eye on it so that it melts properly and you don't want your flame too high, or you'll scorch the pan and scorch the cheese sauce. so
