cooking spray directions: take a pie pan and spray it down with canola cooking spray. then empty the whole bag of hash browns in to a bowl. mix in olive oil and salt and pepper. mix gingerly. now, empty the hash browns in to the pie pan and press the hash browns down in the center. add more hash browns to making a crust. tucking in at the center moving hands outward toward the sides. when you have your crust done. place in to a 350 degree oven for 25-30 minutes or until crust is golden brown. set crust a side. to make the custard all you need to do is crack eggs in to a bowl. add the half & half, nutmeg, hot sauce, salt & pepper. wisk away vigorously for a few minutes. you want to incorporate "air" in to the custard mixture. now, once you a made your custard, gently ladle in custard in to hash brown crust. make sure not to over fill. now, place your quiche' on a baking sheet with a 1" lip. cover your quiche' with foil, and dome it with cooking spray. let it bake for 45 minutes to just over an hour. when liquid on top is cooked out, it's done. garnish with feta, mozzare

at the ready: fresh or frozen white corn, 1/2c red bell pepper, 1/2c diced canola oil, 1 tbs freshly cracked pepper, 3-4 grinds kosher salt, tsp mayo, 3tbs sour cream, 1tbs about 1tbs cumin, 1/4tsp smoked paprika, tsp black pepper, tsp grape or cherry tomatoes, halved, 1/2c cilantro, minced, 2tbs roasted chicken, pulled & diced, 2c avocado, 4, halved, pit removed. method: line a small roasting pan with foil for easy cleanup. toss these ingredients in pan and spread to make single layer. roast 500 degrees till starting to char about 10 minutes. meanwhile, mix these three together in medium bowl, then add this group to above bowl and stir through till mixed. dump all this in, stir through gently, along with cooled divide chicken salad into 4 "quarters" in bowl, mound on top of each avocado half, garnish with a dash of smoked paprika or chili powder and a sprig of cilantro. to eat, use a spoon and gently scrape through to avocado skin to lift out a bite of avocado with each bite of chicken salad. makes a great app 1/2 avocado or full entre whole avocado! serves 8, or 4 respectively. at
