joining me now from parche are owner paul iglesias . i wish you could smell what i am smelling now.host of lots of wonderful flavors. tell us about your restaurant. >> the restaurant was opened to honor the colombian culture, our culture, to present it to the bay area. we have now found that there are so many colombians in the bay area and we are happy and pleased. we open our doors to everyone. it is something incredible. the flavors are amazing. >> we are just trying to give our guests a little bit of our culture through the food, of course. that is what we have been doing all this time. >> tell me what you got here. >> we have a salmon sell pecan. some areas of columbia, the coast, fresh fish, lime, red onions and some personal mixes. we have a capers, some pickled onions. it is like a tartar ceviche version. >> we've got to pair everything. what we decided to do was pair it with one of our classic cocktails that highlights a brandy-based the core. this is something beautiful because it is a fruit sourced from colombia. this is a gin-based cocktail. >> i love that sound. shake it
