bruce brown is here with us. thank you for having me. >> what are you making? >> avocado egg salad, something different. i remember you love it with the asparagus. this is different. just used some different ingredients that you are not accustomed to. i'll have holly start of the dressing. i have zested one whole lemon. that will put the zest of the lemon and the juice of a lemon in with the mayonnaise with salt while she is doing the dressing, i have eight eggs that i hard boiled and then i took two of the yolks and gave them to holly to mix in with the dressing. it will thicken the dressing a little bit. all of the rest of the eggs are chopped up. to this i'll add one cup of diced diced avocado. don't leave it sitting too long, it will brown on you. a quarter cup of finely diced up red onion. mix those all together make sure you have it pretty well mixed up together. that looks good. a little bit of pepper. a little bit of salt. >> there you go. you don't need a lot of salt, putting into this. we'll scrape this into the egg mixture. the lemon in this will kee

bruce brown is with us. >> it is good to be seen. how are you? >> i'm good. you are doing something kind of outside the box. >> yes. everybody is accustomed to spinach artichoke dip. it has taken over the world, ok. i like it, leftovers of it makes great quiche. i also like doing things different. that is through my collard green i start off with eight ounces of cream cheese. to this i'll add sour cream and some mayonnaisemayonnaise. >> ok. >> a half cup parmesan cheese. >> you are a little bit of garlic powder, probably about two teaspoons worth. half a teaspoon of ground white pepper, do not use more. white pepper is stronger than black pepper. unless you want to overtake it with pepper, just a half teaspoon will be plenty. trust me. i have taken two 15-ounce cans of collard greens. what i did is i pressed them, i thawed them -- not thaw, i pressed them like you do frozen spinach. the thing with the collard greens, when you press them, what i do, i use a potato ricer. if you have one at home and you never know what to do with it, you can use it to press you

we are making a favorite breakfast food that gets its >> >>holly: bruce brown of bruce's fabulous feuds in marion is with us. how are you? >>chef bruce: excited to be here as always. >>holly: what do you have? >>chef bruce: pancakes, i like mango. barbara jean likes mango pancakes and i'm making them with a banana maple topping. first off, in the mixing bowl i have got like a cup of all-purpose flour, a little baking soda and baking powder. a tablespoon of sugar and little bit of salt. mix that together and then this i have one and a half cups of frozen mango pieces but they are thought. processor with a little bit of ginger, an egg, there is a few different ingredient, a little bit of lemon juice and i -- and a quarter cup of milk. pew ray them in the food process or blender and we will put it into the wet into the dry of the batter. now, i have our grid l preheating to 350 degrees. just like usual, do not overmix. just kind of fold the flower into the batter into the pureed mangos, and then, once all the flour gets moistened, it will still be a little lumpy. that's good. i also have h

we are back with chef bruce brown of bruce's fabulous foods in marion. we head this carmel apple bread pudding earlier and now we are putting to get ar nice rice and beans dish with an due wii sausage. >>chef bruce: it's traditional, low country and southern and cajun cooking. barbara jean likes black beans a little better but i'm a red beans fanatic. at the end of the last episode we got all of our arrowmatics, the onion, the pepper, the garlic, the celery and everything. all sauteed together and a little residual fat from the browning of the sausage. then i put in about 6 cups of diced tomatoes in the juice. you can use canned tomatoes, no problem. put them in and stir it around. put in all the herbs and seasonings and bay leaves and turn the heat down and let it simmer for 20 minutes. now, it's ready for the rest. we will put it all back up there. add the sausage. you need a lot of sausage for this dish. add the sausage back in and then cooked red beans. now, i'm not talking red kidney beans. i have somebody asked me about that and they said red beans
