the reason most people's gravy is lumpy is flour. it loves to hang out with salt.gravy. if you put the flour in liquid, it'll hang out and create the lumps. to stop that, i have some of the fat we swkimmed off the top of the pan drippings. i'll add in flour. equal part fat, equal part flour. if you don't have fat, use butter. a tablespoon. then a tablespoon of flour. >> you have to have it thicken, right? >> flour is the thickening agent. cornstarch can make things gummy if you go overboard with the water and corncornstarch. >> how do you get it to the smooth? >> the smooth part comes when you add the flour and whisk like crazy. this is something you don't dump, stir and walk away. whisk like crazy. then to this base. after you cook the flour flavor out, you'll add in the turkey stock. that's when you create your gravy. >> final step? >> now, the final step, if you literally have done everything you can to whisk that flour and still have lumps, girlfriend, use the sieve. >> sounds like what i would do. >> it works. one thing not to do, don't use a blender. that's j
