marc siegel. dr. siegel, what do you make of this? we can actually show our viewers some of these numbers here now. confirmed total reported human cases in the united states, you can see it across the dairy and poultry farms and one other animal. not a huge number there. obviously troubling. what do you make of it? >> let me start this out for you, griff. i've talked to top officials at cdc over the past week about this. two different types of bird flu out there. the one in the dairy cattle that you are seeing, 866 herds already, 660 in california. that is the type called b313. fancy name. it means when it actually infects humans it is mild. the symptoms have been mild across the board in that particular sub type. now we have to monitor that. it is spreading a lot among dairy cattle through milk machines and milking and occasionally gets to a farm worker. we have to control that. the second type is in the poultry which we've seen for two decades now. occasionally we've seen a mutation. d1.1 it is called where you get a severe illness.

marc siegel. good morning how are you. >> pretty scary. >> what is considered a seed oil. ould would he be cooking with? >> >> dr. siegel: it is pretty scary out of a journal called gut. perfectly named. university of south florida and by seed oils. they are referring to sun flower oil, or safflower oil or grape seed or cotton seed or canola oil. these types of oil. the issue is that there is more omega 6 fatty acids in those oils than omega 3s. why does that matter? because omega 3 fatty acids decrease inflammation and omega 6s increase inflammation. want everybody to know that inflammation in the gut is what you don't want, that could be a precursor to colon cancer. small study only 81 people. gets on to something that r.f.k. jr. has been talking about which is we don't want a lot of seed oils. we don't want to a lot of ultra processed foods at all. and there is a lot of it in trawl processed foods. increases inflammation and increases risk of colon cancer. may be one of the reasons we are seeing. >> increase 500 percent in children ages 10 to 14. 333% among teenagers age

marc siegel fox news senior medical contributor. for you to clear this up. how concerned should we be about the bird flu? >> we need to monitor it. terms of the two cases at a very severe, the idea that when this virus gets into humans it can cause a severe illness, is not new. that's half of the cases we have seen since 2003 have died actually. what's actually new is the kind that's gotten into cattle is causing very mild disease. so that is a positive thing. we do not know what direction this will go in. the real direction the cdc is looking so closely at this is the flu virus mutate a lot. if they come into contact with other flu viruses, they can exchange material and that can move it in a direction where it goes human to human. molly, experiments were done that a lot of us are not thrilled with back in 2012 which show exactly the mutations that would be necessary for this to go easily human to human. that gives us the ability to monitor this and figure out where we are. that university of minnesota is saying, look the one case
