our plan is to serve from opening until 10:00 p.m. our menu and from 10:00 p.m. to 1:00 a.m. survey lesser menu of food items that will not require as much staff to produce. the idea being in the first couple months we will watch our budget and our time. we will still have food available until 1:00 a.m. if not 1:30 a.m., it will be a limited menu that i believe you have a copy in front of you. i would not have ever considered taking this job if it was supposed to be and nightclubs that have food. i have been a chef in the city for 10 years and doing my internship at aqua and i ran the kitchen at fillmore which is where i got into the soul food aspect and there would be no interest for me to be the side show, we have to have food so let's bring someone in. i have been looking forward to the opportunity of presenting my food to the public in a restaurant setting. we had our tables put in and we have seating for about 52 with the bar seating. to answer the question, we would be willing to turn the tables three times a night as well as doing additional food in the night with a la
