they tenderize the meat much as our mothers might have done and our fathers in the old days using a mallett. they are doing that now commercially but they use fine needles. so i'm not aware of a drug or chemical being applied to the meat and the plant. but it's certainly something we can look into and that might pose a concern. but again what i'm familiar with is more a fine needle tenderizing which is done after the meat is already fully cut. host: you made reference at the beginning but the food safety modernization act. where are we in its implementation? guest: thank you, pedro. that's an excellent question. the food safety modernization act was signed into law by president obama last year. in january. they are now 2 1/2 months late in getting a number of regulations out to the public. we would then have a comment period on those regulations before they take effect. now, 2 1/2 months may not sound very long, but in fact this is critically important because each of these deadlines feeds into additional deadlines. let me tell you just for a minute on what the food safety modernization act
