we're looking to coat the peachs a a little bit. we had the grill preheated about ten, 15 minutes now. it's nice and hot. it's like our previous segments before. i went ahead and scrubbed it off and gave it a nice rub down with the oil to help everything from sticking. olive oil on the peaches is going to help. not going to has had any flavor. it will help from sticking from the grill. and while that is grilling, we can add our one fourth of a teaspoon of italian pepper and 1 tablespoon of vinegar and 1 tablespoon of cilantro. what we're going to do is make a glaze for the peaches. >> that sounds yummy. >> and it will go about three or four minutes, trying to get it soft. but i like to do is use them a little underripe. >> i was going to ask you that question. is it better to have a more ripe or less ripe peach? >> a less ripe peach. if it is too ripe, you'll lose that crispiness and crunch. and then what you're looking for is some nice grill marks on there. and let it go about three or four minutes. and i like to flip it over and l
