we are back with chef bruce brown of bruce's fabulous foods in marion. we head this carmel apple bread pudding earlier and now we are putting to get ar nice rice and beans dish with an due wii sausage. >>chef bruce: it's traditional, low country and southern and cajun cooking. barbara jean likes black beans a little better but i'm a red beans fanatic. at the end of the last episode we got all of our arrowmatics, the onion, the pepper, the garlic, the celery and everything. all sauteed together and a little residual fat from the browning of the sausage. then i put in about 6 cups of diced tomatoes in the juice. you can use canned tomatoes, no problem. put them in and stir it around. put in all the herbs and seasonings and bay leaves and turn the heat down and let it simmer for 20 minutes. now, it's ready for the rest. we will put it all back up there. add the sausage. you need a lot of sausage for this dish. add the sausage back in and then cooked red beans. now, i'm not talking red kidney beans. i have somebody asked me about that and they said red beans
