wayne friedman explains the possible impact of all that smoke on those precious grapes. >> reporter: vines, it's the season for a well-earned rest after the harvest. for wine makers, though, not so much. >> when you farm, you make a deal with god. whatever's handed down, there's no appeal. >> reporter: among growers and makers every year the question is what. which leads us to this sonoma county laboratory far from the vines, the grapes, the barrels and tasting rooms. suffice it to say the instruments have extremely discriminating pallets. we actually burnt some vineyards and heft others sitting beneath heavy blankets of smoke. >> we worried that it got smoke taint and in two or three years time the wine will taste like bacon on ashtray or smokey. >> reporter: smoke taint is insidious. even an expert cannot taste it until too late in the process. but these experts could and did. they examined countless samples with better than expected results. >> the impact of the smoke is not as strong as we were expecting so it's easy to deal with it and make it not smokey. >> reporter: they are t
